What's on the Menu for the week?

Chicken. I'm making Caramelized Baked Chicken and having 4 different ways this week.

1. Served with Veggies.
2. Served in a salad.
3. Served brown rice.
4. served in a wrap sandwich style.

Fridays are our Eat out night.

Why...

Why must I deal with people/companies that are so irresponsible? I had to apply for a buisness permit when I was in that craft show WAY back in October. Well after that, I was suppose to receive paperwork to fill out for my taxes (through the City). I never did. So FINALLY in January I receive the form. I fill it out attached with a check for $10. Well I get a call today saying I haven't filed my return. WHAT? So I explained my situation and she said sorry for someone dropping the ball on her end. However they didn't receive my form or Check.

She asks me to fax or mail her the form (which I don't have because I already did). I asked her to mail me a new form and I'd fill it out and she said they do it all online. So I said fine give me the address, and she then realizes that she can send me a hard copy.

I told her I'd fill out the form again and go to my bank and get a photo copy of the check to prove to her I paid.

So I hang up the phone with her and wonder if my form and check really did get lost in the mail. So I go to my online banking site and look up the check #. WELL WELL WELL, not only did the form and check not get lost, but the check was cashed/deposited because I can see a copy of my check and I can see that the $10 had in fact been taking out of our account.

SWEET SATISFACTION! I can't wait to get the form in the mail so I can send the print out of the check that was cashed/deposited to her.

That lady was so rude on the phone. UGH!

Today I am thankful for the responsible people in my life.

Thankful

Today I am thankful that Brendon's Grandma is ok. With out going into too many details, she had to go into the emergency room last night and was then admitted into the hospital. They did what they needed to do and sent her home earlier today with some meds she HAS TO take faithfully.

So today, I am thankful for you G-ma B.

Rainy Week...

Well, Mother Nature smiled upon me this week. I was suppose to have yard duty in the dreaded sandbox this week....eeeewww Because of the rain, I didn't have to go out once. BLESSED AM I.

Thankful

Today I am thank for CRAZY, Rainy, windy, days. It helps things grow. I love being out in the rain, running from store to store, and coming home and warming up with a cup of hot cocoa!

Windy Monday

The weather has been wonderful! I LOVE Rainy, windy, overcast days. I'm hoping the rain keeps up all week. I love it, the kids (in my classroom)love not going to recess and I won't have to go out to yard duty this week! HA!

I spent my rainy Monday out and about. I hit up Old Navy. Today was the last day of their 50% off the clearance price event. I found some amazing deals for myself and the hubs. I bought the Mr. a SUPER NICE black blazer for $10, some t-shirts for $1.50 and 2 pairs of swim trunks for $2.00. I got myself a pair of denim capris, a pair of comfy steal grey pants, a button down shirt and some t-shirts as well. I came out of that store with 3 large bags FILLED with clothes. I also got these SUPER CUTE heart key chains for 50 cents that I'm going to attach to V-day cards for my grade level (yes there are 2 men in my grade level but they can give the key chain to their wives).

Next I went to Cost Plus World Market. If you go today, you get a free reuseable tote. It's REALLY CUTE, black and turquoise. So I bought some heart shaped pasta for a V-day swap I'm doing and a bottle of water and BAMN I get a free tote.

After that I went to whole foods and Petco. Petco had a good sale on doggie treats.

I got home and popped in EA Active for the Wii. I just got it so, today was my first day. It was amazing. It kept me on my toes and there are no ways to cheat (when you get tired) like in Wii Fit. EA Active is so much more challenging and a lot of fun. It also works with the Balance Board if you so happen to have it like I do.

I can honestly say, my 3 day weekend has been great and I will be fully refreshed tomorrow when I go back to work!

Anniversary

My hubbie and I celebrated our 3 year wedding anniversary on Wednesday. We were so taken back by all the people who remembered. It was so wonderful getting cards in the mail wishing us many more years of happiness, and I got quite a few texts as well. It's so heartwarming to see how many of our friends and family thought of us.

We are going out to dinner tonight to celebrate our anniversary the right way. Not to sure where we are going but it's going to be somewhere by the ocean. Then we're going out for Frozen Yogurt at one of my favorite places.

Today I am thankful to my friends and family who remembered my hubbie and I on our Anniversary.

Work

I work with some of the greatest people I have ever met. I mean it sounds corny but we really are like one big family. Everyone is so supportive and happy and they want you to succeed. I found myself today, Friday leaving work at around 4:15 rather than my usual Friday time of 3pm. What was I doing? Hanging out in the front office chatting with everyone. It was so much fun and I can't remember the last time I just sat around and talked with friends.

Today I am grateful for you... the staff I work with. You are a HUGE reason why I love coming to work everyday.

Thankful

Today, I am thankful a room full of 19 students that were well behaved and eager to learn (their first day back after 23 day off of school).

First Day Back at Work

Well my first day back has been far better than I expected.

The day started off with my key not fitting in the lock of my classroom door. Luckly our FABULOUS janitor came and unlocked it for me. There was something stuck in the key hole. Well I thought it was fixed so he locked the door behind me.

No problem, except for when my class and I went to the computer lab and closed the door behind us...it locked. My key still didn't fit in the whole and we couldn't get back in. So the janitor came and some how picked the lock and did not relock the door.

I thought we were going to have to spend the first day back at school sitting in the teacher's room learning how to write a friendly letter. Would have made for an interesting day, that's for sure.

My kidos have been great. A lot more attentive and alert that normal. We've worked on the 5 steps of a friendly letter, learned a song to help us remember, AND wrote a letter to our janitor thanking him for helping us out today.

Math comes next after lunch and my kids LOVE MATH! We are going to start our Money Chapter. They can't wait. T minis 8 minutes and we will be adding up pennies, nickels and dimes.

Edit: The rest of the day went REALLY well. The kids are getting math and they loved doing the writing activity I gave them at the end of the day. Now to catalog my classroom library.

Turkey Chili



Ingredients:

1/2 lb. Ground Turkey
1/2 tsp. Chili powder
1 15oz. can no sodium added drained kidney beans
1 10 3/4 oz. can of of reduced fat, reduced sodium tomato soup
1/2 c. water
Low Fat Shredded Cheddar cheese (to top)

ADDED: I added 1 can of black beans as well and some spices; greek seasoning, and basil.
*I doubled the turkey (since it came in a 1lb. package) and doubled the black beans.

Directions:

In a large sauce pan cook the ground turkey until not pink.


Stir in the chili powder


Add in the beans and whatever else you want to add here to your Chili, and stir until combined.

Then add in the water and the tomato soup.


Cook until heated through.

Scoop some into a mug, sprinkle with cheese and sour cream (which is what I did) and there you go! GREAT Turkey Chili!

*I also baked corn bread to go with it! YUM!

What's on the Menu?

What's on the menu for this week? Weeelllll, we've got a healthy Turkey Chili and low fat corn bread, and Apple 'n' Cheddar Tuna Salad for sandwiches. All homemade and all sounding really yummy. I'll probably make all of it today in prep for my first week back at work after a lovely 3 week vacation.
