Master Bedroom

Ok, so our new home is coming along, but it's not quite finished yet. I am focusing my attention on the master bedroom at the moment. Why? Because I have a TON of clothes that need a home. My closet is HUGE But I do have things that don't NEED to be or can't be hung. So while floating around on Amazon I found this:

There are also matching night stands I'd like but we need that dresser! It's reasonably priced, so we'll have to save for it!

Science Diet Ideal Balance Grain Free Dog Food




I got a chance to Review the Science Diet Ideal Balance Grain Free Dog Food through Buzzagent!

My dogs love it. Usually when it's time to eat, we pour the food and both Sammy and Pudge will sniff it and walk away. We're going to continue to give them this food and test to see if they really love it or if they are eating it right away due to the fact that it's different than their normal food.

Ernest McLean RIP

It saddens my heart to find out that we lost one of the greatest Disney Cast Members on February 23, 2012. His name was Ernest McLean, but would introduce himself to you as Ernie. He had been with Disney since the days that Walt walked the park and was the last man hired by Walt himself. There is a painting of him and the other two members of a quartet he was in here at Disney, hangs proudly in the downstairs lobby of Club 33. He sat on a stool toward the back of New Orleans Square with his guitar and an amp and would just play. He had so many storys and if you were blessed enough to get him to tell you a a few, well, count yourself lucky.

Rest in Peace Ernie, you were a true gift and I am glad I had a chance to meet you on several occasions.

Baked Mozzarella Sticks

For dinner tonight I made baked mozzarella sticks and salad. My hubby loves fried mozzarella sticks, and I thought we'd give this a try. After last nights success with the healthy tacos I had more confidence going into tonights dinner. Results: SUCCESS! They turned out really well, the only thing I will change for next time is either use the tomato basil string cheese or add some italian seasoning to the inside of the wrappers.


Recipe from Pintrest

Ingredients:
12 Wonton or Egg-Roll Wraps, at room temperature
12 Light or Fat-free Mozzarella String Cheese (or tomato basil string cheese)
Marinara Sauce (Low-Sodium) for Dipping
Small bowl with water, optional
*optional- italian seasoning.


Baked Directions:
1. Preheat oven to 400 degrees.
2. Take one of your room-temperature wraps (less likely to break and ooze cheese all over if room-temp and slightly wet) and lay on flat surface in front of you, like a diamond. Put cheese stick in middle, corner to corner (or slightly below).



3. Take the bottom corner and fold it up over the cheese stick and stick to other side of wrap tightly. You can add a few drops of the water here to make the wrap stick better.



4. Carefully (here is the part where the wrap can break), fold over the right and left corners of the wrap onto the cheese stick to completely cover the cheese.



5. Roll up the wrap.


6. Bake at 400 for 10-15 minutes, turning once, until golden brown. Use your judgement on the time. My cheese oozed out a bit. I'll use more water next time.

Some cheese escaped.

Crockpot Chicken with Oven Baked Crispy Shells

For dinner tonight I made Crockpot Chicken with Oven Baked Crispy Shells. I had never tried it before and I was very nervous that the hubs wouldn't like it, but you know what, he loved it and ate 6 tacos! HOORAY!

So here's the recipe for both the Crockpot Chicken and the Oven Baked Crispy Shells (both recipes found on Pinterest).

Crockpot Chicken Tacos

1 envelope Taco Seasoning
6 pieces Boneless, Skinless Chicken Breasts *I used 4*
1 jar Salsa (16 oz)

Dump everything into a crock pot and give it a little stir to blend the seasoning with the salsa. Cook on high for 4 to 6 hours or on low for 6 to 8 hours. When done, the chicken should shred easily when stirred with a fork. *I cooked mine on high for 5 hours and it was perfect*





The Hubs likes his chicken dry, so I put some in a strainer and let it sit for a bit to dry it out a little.



Crispy Taco Shells

12 6-inch corn tortillas *or as many as you and yours can eat*
Canola oil cooking spray *make sure it's the spray*

Optional
3/4 teaspoon chili powder, divided
1/4 teaspoon salt, divided
Any other seasoning you'd like to use.

1. Preheat oven to 375°F.

2 .Wrap 4 tortillas in a barely damp paper towel and microwave on High until steamed, about 30 seconds.


3. Coat both sides with cooking spray; sprinkle your seasonings. *I didn't use any seasoning and it was great*

4.Drape each tortilla over a panel on a baked-taco rack and bake until crispy and brown, 7 to 10 minutes. *7 min. worked for me*


5. Remove the shells from the rack and repeat Steps 2 and 3 with the remaining tortillas.


**Get your toppings ready and it's TACO TIME!

What's on the Menu Tonight?

Tonight we'll be having Crockpot Chicken Tacos. I've got the chicken in the pot now and it's making my mouth water. I'll be making baked crispy corn taco shells when the chicken gets closer being done. These are both new recipes so I hope they turn out well. The hubs is very picky so my fingers are crossed, especially for the taco shells. Hubby loves the fried crunchy shells and this is a MUCH healthier way to have the crunch he loves.

We have a mattress

Ok, so you know how deliveries company tell you they'll be at your house between the hours of 8am-12pm it's usually closer to 12, well NOT TODAY! We were given today Monday, between 8-12, and I get a phone call at 7:30 AM saying they are about 30 minutes away! They ended up getting here a little after 8am. SCORE! I was so happy, on one hand and bummed because I was thinking to myself, MAN I could have taken a sub job today for at least half day.

Anyway, I haven't found a California King comforter I like yet, so until then, I have a king sized comforter I got from Anthropologie on it. I am using the back side of the comforter because the front has a lot of white and if one of the dogs jumps up with dirty feet... I will NOT be a happy camper.

We need pillows


So ok, we had two pillows for the guest room bed, and I went out and bought 2 more. Apparently I need to go out again! There are only 4 on the bed and it looks sad.
