Wtermelon Salad Recipe

Watermelon Salad

Ingredients
3/4 cup halved, thinly sliced red onion
1 tablespoon fresh lime juice
1 1/2 quarts seeded, cubed watermelon
3/4 cup crumbled feta cheese
1/2 cup pitted Katamala olives halved
1 cup chopped fresh mint
2 tablespoons olive oil


Directions
1.Place the onion slices in a small bowl with the lime juice. The acid of the lime will mellow the flavor of the raw onion. Let stand for 10 minutes.
2.In a large bowl, combine the watermelon cubes, feta cheese, black olives, onions with the lime juice, and mint. Drizzle olive oil over it all, and toss to blend.

Watermelon Salad.

Today was my school's Staff/Retirement party. I volunteered to bring Watermelon Salad. It was yet another recipe I had never tried before and chose to have my co-workers be my test subjects. It turned out wonderful! I got so many compliments and I was so happy.

Wiped out!

This is such a hectic and stressful time. We've got some family things going on, school stuff and today alone I got home at 3:00, and have been baking ever since. I just finished. I made 2 loaves of Beer Bread for the Classified Luncheon tomorrow and two dozen Strawberry Cupcakes with homemade frosting....

It's time to just sit back and relax.

Discouraged

Well, I was looking at what I'd need to do to get my teaching credential in the state of Texas. UGH.... I have to take yet another CSET like test. That test was just awful. There are certain states that have the equivalent test that Texas has... unfortunately, California's test isn't on that list. I don't know why, because it's suppose to be one of the harder tests to pass. I'm still going to try and see if they will accept my credential and testing...
