Quick Chicken Tortilla Bake

This was my Sunday "Cook a meal for the week" dish. It turned out SO SO GOOD. It's a basic recipe and I added my own twist on it and boy it turned out GREAT! You could even make this with out meat!

Ok here's the recipe, Enjoy the taste and how SUPER SIMPLE AND EASY it is to make.

Prep: 15min. Bake:45

Ingredients:

2- 10.75 oz. cans of cream of chicken soup
1- 10oz. can of diced tomatoes with green chilies, undrained
12- 6/7 inch corn tortillas, cut into thin bite-size strips
3 cups of cooked, cubed chicken
1 cup shreaded Mexican Blend Cheese

****My added ingredients: Black Olives, corn, black beans, cilantro, chives, light sour cream

Directions

~Preheat oven to 350F.
~Combine in a bowl both cans of soup and the can of tomatoes and set aside.
***This is where I also added corn, black beans and black olives
~Place 1/3 of the tortilla strips on the bottom of a 9X13 pan.
~Layer half of the chicken on top of the strips.
~Pour half of the soup mixture on the chicken.
~Repeat layers
~Place the rest of the tortilla strips on top.
~Cover with foil and bake for 40 minutes.
~Sprinkle with cheese and
~Bake for another 5 minutes (with no foil) until cheese is melted.

I served this with light sour cream, cilantro, and chives.

All you need is to make a salad and you've got dinner! YUM!

Snow on the Central Coast (of California)

Well the forecast said it may snow today and by golly it sure did! It wasn't a lot and it pretty much melted by the time it got to the ground, but it was my first experience with snow and I loved it!

Sammy isn't much of a getting wet/cold type of a dog, so he sat on the porch and watched the fun. He did however get a little on him though.


And then there's me. YAY SNOW! I was thrilled.

Target Deals

I tell ya, if you hit it right, you can really get some GREAT deals at Target. My cousin, Chrissy, got a great big Blow-up ball for her 3 adorable kiddos to play on for really cheap. My other cousin, Juli, got a really nice train table (for Chrissy's boy) at Target for a song. I love great deals, especially when I can find them while shopping for things I actually need.

Like many people I am loving diffusers! They look pretty and make any room smell great! Check out ones I got today. They were all under $4. I already opened one and stuck it in the bathroom. The box for it is so pretty. I'm thinking of using it as a gift box. God Bless Target Sales!

Pizza Poppers

Well maybe that isn't the best name for these since they are bigger than something you'd pop in your mouth. Well whatever you call them, I call them YUMMY! They are SUPER simple, and SUPER easy to make. Perfect dinner munchie for the SUPER bowl. They are great because you can accommodate everyone and their favorite pizza toppings.



I used:

Trader Joe's Pizza Dough
Pizza Mix shredded cheese
Trader Joe's Pepperoni (whatever kind they sell. There was only one choice there)
Mushrooms
Flour (to roll out dough)
Parm. Cheese




Directions:

*set oven to 450
*Grease cookie sheets with olive oil
*flour work surface and hands.
*Squeeze out a small-medium sized round of dough
*flatten it until a square
*sprinkle desired toppings
*fold over (into a triangle) and pinch edges closed
*place on cookie sheet
*crimp edges (optional) to make it look pretty
*Drizzle olive oil over each popper and sprinkle parm. cheese ontop
*Place in oven for 10-15 minutes or until the edges start to turn a golden color.

Happy 2011

2011 hasn't started out to be all that great. On new year's day, a friend, and co-worker of mine passed away. John taught 2nd grade with me. He hadn't been teaching this year because he had hurt his foot and his recovery took a good 6 months. When he was strong enough to walk for more than an hour at a time, he'd come to school and visit his students and had every intention of coming back the week before Christmas vacation. And he did. The Monday before Christmas break he was back! Everyone, teachers and students were so excited and happy to have him back. John said despite not being use to walking and standing so much he was so happy to be back. Well John only lasted 2 days that week at school and he got really sick and missed the last 3 days. We wished him well knowing we'd see him in January when school started up again.

This was not the case.

On New Years Day John had a stroke was rushed to the hospital. While there they found to brain aneurysms. They preformed surgery successfully but John did not wake up from surgery. He remained unconscious and now on life support. His family knew he was gone. I found out this info as it was happening and it didn't seem real to me. I had just seen him a few weeks ago and he greeted me with a HUGE hug and an "I've miss you". His death didn't hit me until the day after his passing. I was driving to Target and something clicked. I started crying uncontrollably.

Yesterday was his viewing and memorial, and it was just how I think John would have wanted. There was some sadness, but the church quickly filled with, smiles and laughter when everyone got a chance to go up and share stories.

John was an awesome person, teacher and friend and he will be dearly missed.
